“All our single varietal reds follow the same winemaking philosophy seeking to transfer you to the most Atlantic Galicia. A rich and diverse land like the almost forgotten and abandoned red varietals in this secluded white wine region. Wines with very good acidity that have completely different personalities thanks to its authentic varietal expressions.
Our Souson is a faithful expression of the variety that gives it name. Intense colour and fruit forward. Souson is a Rias Baixas red wine greedy, resounding and with good acidity becoming the perfect match for meat stews, hunting, grilled red meats and stews or pork cheeks.

WINEMAKING
Hand harvest picking in boxes perforated of 15 Kg.
Selection of grapes.
Complete destemming.
Alcoholic spontaneous fermentation in open barrel of 500 L.
Total maceration of 15 days with 2 “pigeages”/day.
Vertical hydraulic press.
Spontaneous malolatic fermentation.
Ageing 12 months in new French oak barrel.
Fining with eggs and sea watter.
Filtration.
WINE TASTING
An attractive and delicious wine. A nose rich in black fruits (blackberries) and minerality, Indian ink and raspberries. An ample, very round mouth with a dense structure extended by a luscious acidity. A wine to enjoy.
